Zucchini Pizza

I noticed I was getting sicker in 2014 because my work schedule was so crazy. I'd fly back and forth places, not get enough rest, and eat the worst "healthy" fast food. After my concussion I told myself that I'm going to start cooking, eating more organic foods, and get my health right. I hate cooking. Let me repeat. I HATE cooking. Like I would rather work out non-stop than cook. I would rather wear a pair of uggs than cook. Just kidding, I'd rather cook than wear uggs, that was me reaching but I seriously dislike cooking. I worked at a Middle Eastern restaurant from 14-21 years old so I'm over it. Anyways, I attempted Zucchini Pizza. It wasn't as disastrous as I thought it would be but glad it's over. Can't lie, I'd so rather be eating this giant strawberry pound cake behind me but healthy food will do for now. Also, I just have to say that I wish there was a behind the scenes of me trying to take these damn food pictures. They look pretty and all but I literally had to stand on a chair and put my foot on the counter for balance. It could've been a blog post in itself. "Difficulties of taking food blog pics."

2 large zucchini
1 clove garlic minced
2 Tbsp olive oil
1 cup marinara sauce (organic is what I used)
1 cup shredded mozzarella cheese
4 portobello mushrooms
1 Tbsp of oregano
4 fresh parsley leaves
3 fresh grape tomatoes

Preheat oven to 400. Cut the zucchini in half. Then in a bowl you stir together minced garlic, olive oil, and oregano. Brush it onto the zucchini halves. Take a spoon and flood the zucchini with it. Then take the shredded cheese and try not to over do it like me. I like putting a lot of cheese because reasons. I then picked parsley and put it on top with mushrooms and tomatoes but you can really put whatever toppings you like. Bake for 15 minutes. Then shove your face and tell me about your experience.

  11. OMG, I so agree. Flying & traveling all the time just makes you aware of how healthy or unhealthy your body is. I pay so much more attention to what I'm eating these days and my body thanks me with no swollen ankles after a 6 hour flight. :)
